Today’s handmade Christmas idea is not a thing to make but to bake!
They are tasty, smelling like Christmas, beautiful to look and so traditional!
Ginger men Cookies!
I got the recipe from all recipes: this one. It’s in French so I’ll translate + I’ll make my changes because I don’t use white sugar or wheat flour.
- 225 g soften butter
- 300 g coconut sugar
- 1 egg
- 1 tbsp of orange zest (organic, not waxed)
- 2 tbsp of honey
- 375 g of wholemeal spelt
- 2 tsp of baking soda
- 2 tsp of ground cinnamon
- 1 tsp of ground ginger
- ½ tsp of ground clove
- ½ tsp of salt
- Cream the butter and the sugar. Add the egg, then the honey, then the rest of the ingredients. Let the dough rest all night (or 2h if you can’t wait!)
- Oven at 190ºC (thermostat 6). Spread the dough about 1/2cm thick. Cut ou the ginger men cookies. Don’t put them too close to each other when they cook.
- 10min in the oven – wait for them to cool down so they can harden.
The icing is NOT sugar-free I haven’t found the perfect icing yet… One cup of icing sugar and one egg white! First you beat the egg white. Then add the icing sugar slowly as you beat the egg white. Now time to decorate the guys (my favorite part!!!)! I used a freezer bag in which I cut a small hole at the bottom. I worked magic!
By the way they are delicious!!!
I made many many batches as I was afraid they’d touch each other while cooking… So they ended up cooling down everywhere in my kitchen!
I’m so happy with the result! You should see the stars in my little ones’s eyes when I give them one cookie. MA-GIC!
